Strawberry Shortcake Cookies

Hello my beautiful friends,

Happy Friday! Hope everyone is enjoying this beautiful sunny day. Early this week my daughter and I went to our local farm and picked up some fresh strawberries and made strawberry shortcake cookies! They came out so delicious and is so easy to make, I definitely recommend trying it out.

Ingredients:

1. 3/4 c. chopped strawberries

2. 1 tbsp. lemon juice

3. 1/2 c. plus 1 tbsp. granulated sugar

4. 2 c. of all-purpose flour

5. 1/2 tsp. baking powder

6. 1/4 tsp. salt

7. 1/2 c. butter, softened

8. 1/4 c. light brown sugar

9. 1 large egg

10. 1 tsp. pure vanilla extract

Directions:

1. Preheat oven to 350 degrees. Line baking sheet with parchment paper.

2. In a small bowl, stir strawberries, lemon juice, and 1 tablespoon granulated sugar until combined. Let sit for 10 minutes, then drain.

3. In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl using a hand mixer, beat butter, remaining 1/2 cup sugar, and brown sugar until light and fluffy. Beat in egg and vanilla extract, then stir in flour mixture until just combined.

4. Gently fold in strawberries.

5. Using a cookie scoop, place the cookie dough 2" apart on the baking sheet and bake for about 18 minutes or until cookies are golden around the edges.

6. Let cookies cool down on a cookie rack.
